I am making a shell of fibre reinforced composite material.
I know the area of shell. Lets say its 'X' m^2.
Fibre glass of 600 grams/m^2 is used.
I can find the weight of fibre as,
Weight fraction of Fibre= (600 grams /m^2 )(Area of Shell=X m^2 )= ' Z ' grams.
I did the weight of the composite shell.Lets say it comes ' Y' grams.
Now weight of Matrix is = Y-Z
Are these calculations and results valid?
Weight fraction are usually expressed in percentage terms. With your calculation you can find the weight of matrix and reinforcement in your shell, but this cannot be defined as "fraction". To determine the weight fraction of fibre or matrix, you should simply divide their weight by the weight of the shell. For example, the weight fraction of fibre is Z/Y, while that one of matrix is (Y-Z)/Y. Obviously, you can multiply the results by 100 to write n%.

Yes you can find the fraction easily just by using these additional equations
weight fraction of fibre % = Wf = [ Z / Y ]* 100%
weight fraction of matrix %= [ 1-Wf ] * 100% =(Z-Y) / Y * 100%

The standard method to determine fiber volume or weight fraction is Acid Digestion method. Please read ASTM D3171. It outlines exactly you should follow.
