As media converters depend on ISO layers 1 or 2 the decoding on the receiver side depends on what's transmitted. Decoding a UART serial signal requires an opto-electrical (E/O) converter followed by a UART, decoding Ethernet requires an E/O converter followed by the appropriate ethernet controller. And so on.

Datasheets of fiberoptic components @ Avago Technologies (www.avagotech.com) will give you an impression of how things work.

if you could specify what EXACTLY you want to know or achieve ...

My best guess is that you would not ask about protocols on copper lines - already knowing that virtually everything is possible. Aside from some difficulties when it comes to non-binary transmissions (which are slightly more complicated due to the non-linear characteristics of the optical transmitters), you may consider optical links just as a non-copper 'wire'. Nearly anything is possible.

i want to know how MediaConverter work? how umlaut different signals together and send over fiber optic and how denote them in the other side after sending them?

for example we have ethernet signal, video, voice, serial at the same time. we enter them to media converter, media converter merge them and send by fiber optic, and the other side denote them to original signals.

In this application you have typically "Ethernet", VideoOverIP, VoIP, SerialOverIP etc.

So the media converter is simply converting "Ethernet" to optical - and reverse.

And if your media converter does offer separate ports for Video, Audio, Serial etc. my best guess is that these are converted to "IP" and merged with the "standard ethernet data".

"Denoting" is nothing more than accessing the right stream with the "conventional" means - after having converted back the signal to the electrical domain.

Agilent is offering electro-optical and opto-electric converters for MBit and GBit applications - targeting exactly this market segment.

I hope that you get an impression of the simplicity of the approach now. There's no mystery about this - it's just about replacing a segment of copper with an optical link.
