To me the best reference in this field is the book on "Wettability at high temperatures" by Eustathopoulos, Nicholas and Drevet. 

Obviously if you have a more specific question you may get a more specific answer, i.e. if you let us know what type of ceramics (oxides, carbides, others) you're looking at and what metals you are interested in the answer may direct you towards specific references.
