It could be a member of Apiaceae family
I am not very sure but could be Ferula communis or some species of Lomatium.

Yes surely it is Thapsia villosa
Thapsia villosa and Ferula communis both are found in Andalusia, Spain. However, Lomatium dissectum has not been reported from the same region.

according to a friend, botanic of the University of Santiago de Compostela, it is Thapsia villosa.
But to be 100% sure he will need images with the fruits and, more accurately, of the leaves.
