It is really basic electronics.... how can you pretend to measure independently the resistance using a multimeter in a powered circuit???? There are several measurement setups for resistance and the simplest one usually employs the voltmeter and a constant current circuit. So here you are simply injecting extra current in your diode from the multimeter...
Moreover it is really bad laboratory practice to do a measurement like you do i.e with your hands holding the ends of the multimeter. The small movements of your hands (that you don't notice) can cause the reading to fluctuate
I swear, the IN4007 has the expected I/V (from which you can calculate the resistance) characteristics. This was one of the lab activities where we had to find the way to display it on an oscilloscope...

Matteo leoni thanx sir....since this observation i am my self finding my self to prove my self wrong..but he issue is that i got the same deflection in reading from cro & analog multimetter also..if i guess 1n4007 internal resistance is high in itself so while measuring voltage in series will make the internal resistance even higher..so while noting voltage does the issue of current injection arrises??
Matteo sir..i/v characteristics was different than the reading......second no independent resistance measurement bec at that moment the diode was between two power supplies..one was on for bias second was to follow diode voltage....this experiment continued for two months in two different series
