We usually combining interview after drawing as to prompt the informants' interpretation and explanation of their drawing. Lots of studies about the draw-and-tell method you can find online. There is always challenge of analysising the visual data, particular drawing as it itself is an art making activity.

Have you thought about using music? I don't mean that they should play, but rather that they could choose from a selection of songs expressing various moods. Perhaps classical music? I'm sure this is being done somewhere.

Expressive Arts Therapy (EAT) or Creative Arts Therapy. (not the same as art therapy. Think of it as Art Therapy is psychology based where as Expressive Arts/Creative Arts is art based (more personal, the yoga of art).) Organization IEATA (Internation Expressive Arts Therapy Association)

Psychoneuroimmunology  (PNI) (the study of the relationship between mind, body, and the immune system. Positive thoughts, good chemicals, improved immune system and strengthening health. Feel sick, think sick, get sicker.)

Stress/Nervousness/Anxiety release (where I became aquainted with PNI and searched for programs and practices revolving around Health and Art (EAT).

Each of these would talk about and apply to the psychological benefit and health influence of the mind and body relationship in a more personal perspective rather than strictly for research. 

I discovered these today and feel that much of it is applicable to both of our fields.

You might also want to try some forms of creative writing. Participants get pen and paper and start writing for a few minutes (non stop) keeping the pen in contact with the paper at all times, trying to not think or edit the material. This is similar to automatic writing in that the material is often full of insights and can be used for further expression (by selecting particular sentences or paragraphs either randomly or with some pattern in mind, making word association games (such as those proposed by Carl Jung) etc.

Creating short improvised performances with voice, sound and body language can also be very powerful, as it engages even more angles to the participants. Again, ideally the environment is conducive to shut the "inner critic" or editor down. Relaxation and meditation exercises prior to all this can help with this. As a general rule, the more people feel free to be taken by expression, the better.  

Improvising with musical instruments regarding their ability is yet another really useful tool for expression. Same suggestions: it´s not about creating formal masterpieces (for an audience, needing external valuation/recognition) but about creating expressive masterpieces (with intrinsic value, not subject to external valuation).

And if photography is at all possible (maybe with smart phones at least ?), taking pictures and manipulating them with filters to satisfy expressive needs can also lead to quite interesting exercises. From body parts (such as eyes, ears, mouths, limbs...), to furniture or landscapes and matching certain words or feelings with the material, then making collages... Even exploring themes in groups and making visual "objects" from all possible angles, then work with the objects others have made... (taking other´s work further actually works for all examples and encourages feelings of belonging, group coherence etc)
