Hello Mr. Abdullahi, Image analysis of emulsions are usually done using ImageJ software. I have given a link at the bottom for that. If you are looking for more accurate data then image analysis may not be the perfect tool. Hope my answer helps you. http://mesa.ac.nz/?page_id=3813

1- CANADIAN JOURNAL OF CHEMICAL ENGINEERING ; 2- FUEL; 3- JOURNAL OF ENERGY RESOURCES TECHNOLOGY-TRANSACTIONS OF THE ASME; 4- LANGMUIR; 5- COLLOIDS AND SURFACES B-BIOINTERFACES; 6- PETROLEUM SCIENCE; 7- ENERGY & FUELS.
In these journals you will find articles about the subject of your interest. Usually softwares such as: Image J or Fiji, Noesis Visilog, AnalySIS (Soft Imaging), Image-Pro, MATLAB and Gwyddion (images obtained with nanometric resolution) can be used for the analyses of oil emulsions.
