I would look at the work of Susan Danby and her team using conversation analysis.

Altough not related in particular with young second-language learners, this might be usefull:

Attached is a valuable article together with the included references. My simple note is that closed questions are better starters (such as: What is the capital of Norway ?). After, the learner gains some vocabulary & phrasing sentences, the open-ended questions (such as: Why do you like to visit Norway?) could be given. Of course, the professional teacher knows very well that the learner needs some time to answer. When an open-ended question is asked, the teacher ought to explain more about what is required so as the question becomes less broad for a beginner.
