I am looking for a general reference source that would cover the mechanisms of the formation of such fine microstructures in metallic alloys (either form homogeneous liquid or a homogeneous solid), their properties, real-world use, and perhaps some outlooks.

there is an old book from Kleber and Bautsch which I used in my studies almost 30 years ago and which I can really recommend, as it covers practical aspects as well as the underlaying thermodynamics - it is however available only in German :-(
However, there are several on-line tutorials etc which I found quite informative (e.g. the one from Stephen Nelson in Tulane University, https://www.tulane.edu/~sanelson/eens211/2compphasdiag.html, in particular since you've asked for the formation of microstructures in NATURE, and also

deals with rock formation processes at elevated temperatures and pressure and might also be suited)
For a more "technological" approach, i.e. the use for technical processes, I propose
Intermetallics 91 (2017) 124-128, (doi: 10.1016/j.intermet.2017.09.001) where concepts for the formation / precipitation of new alloys are well-described.
Last not least, those processes became more and more important also for organic materials (light emitting diodes, photovoltaics, and bio-materials such as membranes), thus I would also propose the review from Anthony Lee (Biochimica et Biophysica Acta (BBA) - Reviews on Biomembranes 472 (1977) 285-344 DOI: 10.1016/0304-4157(77)90001-6), although quite some years old, it provides information about important concepts and organic model systems.

my personal favourite is "Phase Transformations in Metals and Alloys" of Porter and Easterling. They describe quite straightforward thermodynamical basis of phase transformations, diffusion and crystal defects. After that, typical phase transformations are described (solidification, precipitation, martensitic transformation etc.).

The studies on microstructure formation began around 1900s. Since then several researches have focused on understanding the solidification mechanism. For having a glance over the literature, I strongly recommend the PhD thesis written by Irmak Sargin from Iowa State University entitled "Invariant and univariant eutectic solidification in ternary alloys".
As textbook, Fundamentals of Solidification by Kurz & Fisher is highly recommended.
