the usual means to record data are add-on data recorders usually incorporating a large hard disc.
I currently have no vendor or manufacturer in mind. Anyway, look at the pages of ETAS, vector and/or Softing (there are more "diagnostics tools" suppliers). Or try searching "automotive data recorder" at g..gl.
i think that you don't need data backups, data backups can't give real time plotting i think that you must need some RF signal from the sensor so that the signal can be send from the sensor front to the monitoring system so that you can process the signal. Now a days we advanced with Wireless Sensor Network so you can make an embedded system such that it can send data from vehicles and also you can back up data and real time processing.
