Transfer of material (fluid dynamics ) I do not know the history , certainly know that conduction /convection and radiation are fundamentals of heat transfer much older than any formulated thermodynamic principle (I guess). The basic fact the sunlight =light +heat that warms of earth is a norm .
I guess ever since Copernicus helio-centric cosmos came into existence and better even with Galileo's solar observation and concept warming of our earth has been in discussion that is pretty old .

The order of the topics (fluid mechanics = momentum transfer, heat transfer, mass transfer) is because this is assumed appropriate for learning. Fluid mechanics is needed when studying heat and mass transfer in combination with convection. Mass transfer (especially multicomponent) is regarded as a bit more complicated concept than heat transfer. Advanced fluid mechanics is often treated later in engineering curricula.
