Is it possible to detect type of object (e.g. Hand or Ball) using Ultrasonic transducer?

I have earlier worked on detecting hand motion gesture using Ultrasonic sensors. Sound is absorbed by different objects. But is it possible to quantify absorption and determine the type of deflector?

I am working on Ultrasonic sensors, but I can't figure out how my microcontroller will be able to capture and store the signal values in an array even if I provide a sampling rate of 44 KHz.
