Are telescope lenses or mirrors---or the lenses of our eyes---necessary for the maximal detection of individual photons from distant galaxies?

I'm well aware of the light-gathering power of lenses and mirrors, but was wondering what, if anything, they do on the individual photon level. I'm wondering how "fat" or wide individual photons...
