Does anyone know if some additives may decrease enzymatic acitivity (instead of increasing) above a certain concentration? Is there any paper about?

I'm testing mannitol at the concentratios 1.4%, 2.8%, 5.6% and 8.5%. 1.4% is not sufficient to keep the enzyme in this active form. At 2.8% the enzymatic activity is kept, but at 5.6% and 8.5%...
