Can anyone tell me any process aside from freeze drying that makes crunchie fruit chips?

I am trying to make crunchie fruit chips, without a freeze drier, does anyone have information on any other process, excluding also conventional drying.

How do you determine the G' , elastic moduli; G'' , viscous moduli; h*, complex viscosity; tan (d) and y deformation on a stress weep test?

I found in a paper that by the stress sweep test you can determine G', G'', n*, tan and y. However I dont know how to determine it using the curve. Does anyone knows? I am attaching the paper I found.
