I am keen to do a real time project in noise cancellation. So far I am comfortable to analyze the signals using MATLAB only. Now I am interested in doing all such things and keen to see those things happening in real time. So which DSP processor is best to start with?
You need to answer the following questions first.
1. What is the bandwidth of your signal? This will determine the sampling rate, and later number of operations required per second.
2. What are the parameters of the noise cancellation algorithm that satisfy the performance? Filter order, number of operations per sample, step-size
3. What is the performance of algorithm in fixed-point? How many bits you need to get a satisfactory performance of the algorithm. You need to do fixed point analysis/simulation to know it.
4. Given the number of bits per sample, number of operations per second, what is your real-time requirement? How many operations per second should a DSP do in order to meet the real-time specs.
Now you see the specs of DSPs available in your lab or market, find its evaluation module and start programming.

For a very flexible entry level development environment and DSP starter kit I'd recommend the TMS320C6713 DSP Starter Kit (DSK) provided by Texas Instruments (jointly with Spectrum Digital).

MS320C6713 DSP Starter Kit (DSK). There is a book Real-Time DSP with MS320C6713 DSP Starter Kit (DSK) , that will also help to work with as it also deals how to sample and play through Microphone. MATLAB and C code come with the book.
Actually, I used dsPIC as I was newbies. This model is for beginner like me.

But I used another compiler like Visual Basic to archived the project. My project is about to find a correlation between normal heart sound and abnormal heart sound (like systolic murmur or aortic valve murmur). It works great for that. I think this information will help you no more or less.

I was working with booth TMS320C6713 (also TMS320C6211) and tiny Microchip PIC dsPIC family. Of course consider the suggestions of Mohammed Mobien and then decide, TI gives you pretty simple way to start and You do not need much hardware. To start with. It has a link to matlab/simulink but the time You will spend to runn an "Helo Word" application is in my opinion very long.
DsPIC You need a programmer/debugger but the one useful think is flexible hardware (Microchip offers a lot of extensions and it is easy to design some hardware for Your own use). Consider also information availability.
