I am trying to crystallize a polyphenol called naringenin through cooling crystallization. I start by saturating a solution at 45 C and then I cool gradually (10 C/h) up to -5 C. Afterwards, the temperature is increased back again to 45 C. It happens that all the times I tried, a lot of nucleation occurs when the temperature starts rising from the -5 C and never while it is cooling and supersaturation is considerably high. With another polyphenol, resveratrol, everything occurs as normal: while temperature is decreasing, nucleus form, they grow, etc.

If I just let a saturated solution evaporate, crystals form and grow normally.
