I am working on the Sentinel-1 imagery for the identification of crops.
I have worked on the Sentinel-2 and Landsat-8 imagery for the identification of crops and classification, and that was done perfectly.
But now I am focusing on the SAR data for identification of crops.

You can use SAR data in field crops only for rice classification. A monitoring system of ricecultivated areas provides necessary information on rice-growing areas and rice growth conditions. Synthetic Aperture Radar (SAR) has become a valuable tool in kharif rice monitoring due to its unique capability for acquiring data over large areas almost independently of light and solar illumination. Apart from this, SAR is also sensitive to crop geometry and flooded condition (Henderson and Lewis 1998) and, hence, the rice field can be easily detectable by SAR due to its unique temporal SAR backscatter (Aschbacher et al. 1995, Chakraborty et al. 1997, Panigrahy et al. 1999).

I think that it depends on the crop types you are interested in. But in general, and after my modeste expérience, SAR data aren't enough to classify crops especially in very heterogeneous areas (tree + vegetables...). However, combining Sentinel 1 and 2 can give more accurate results.
