I have pectin solution and wanted to characterize it based on its color. Can anyone suggest a possible way changing the color of the pectin solution, which is transparent to a colored one such as blue, violet of pink without changing its molecular weight or particles size?
There are 2 ways the generate color: an absorbing chromophore and interference. Since pectin does not have a visible wavelength chromophore itself, you would have to add one, such as by adding a dye or chemically modifying the pectin. Interference-produced colors result from the existence of parallel thin layers of material in which the thickness of the layers is similar to the wavelength of light (examples are the colors in an oil slick on the surface of a puddle, the iridescent colors of some insects, and some types of optical filters). I don't see how such a metamaterial could be produced in a solution.
A colored or fluorescent dye dispersed in the solution could be used to characterize some property of the pectin solution, such as its pH or the presence of certain ions.
