If you've got multiple-choice tests in which one answer is correct, simply make each question binary with 1 being incorrect and 0 being correct. This will let you examine number of incorrect responses by other variables. You can also use this format to examine the proportion of incorrect or correct answers, which lends itself to various statistical tests. There are item difficulty analyses that you might want to look into as well, but this transformation should get you started.
If you have multiple-choice tests in which there isn't a correct response, then you can use multinomial logistic regression, chi square, etc. Basically, you want a nonparametric test or one that uses a chi-square distribution.
