What are the factors influencing the production of exopolysaccharide (EPS) of micrbian origin? And which culture medium is suitable and which highlights the production of these EPS in large quantities (maximum production) by the bacteria. That you advise me?
As with anything in biology, the factors are many. The single most important factor is the organism and it's genetic makeup. Also important is the nutritional status. For example, many microbes will produce more EPS in nitrogen-limited conditions, especially if the carbon source is not limited. Furthermore, some microbes produce EPS as a means of forming protective biofilms, so when they are growing on a solid surface, they produce more than when they are growing planktonically. Different microbes have different pathways of producing EPS, including Leloir and non-Leloir pathways. The optimum culture medium and conditions will depend on the organism you choose to study.
Dear Chaida, it depends on which microorganism used to produce EPS, actually sugar content and type e.g. sucrose in Brain Heart Infusion broth or in rich media can increase EPS production.

Many factors play a role in this regard;
1. Genetic make up of the strain.
2. Culture conditions viz., incubation time, incubation temperature, initial pH of the culture medium.
3. Composition of the culture medium viz., the carbon source, nitrogen source etc.
4. Static/shaking condition of the culture flask.
For initial screening 'congo red agar' method can be used.
