As a Ph.D. candidate who is working with remote sensing applications in different research areas such as air pollution, evapotranspiration, water resources, and solid waste management, I would suggest you analyze urban heat islands that are created in our urban areas and different satellites such as Sentinel 2 and Landsat 8 are able to capture the anomalies and assess the land surface temperature related to intensified urban and populated regions. on the other hand, you can also focus on classification and landcover change over a period of time which means landcover classification monitoring. increasing the area in one class (say agricultural) probably accompanied by decreasing in another class which is for example urban areas, this again leads to understanding the approach of a region and the way of their development.
as another idea, you can assign the urban materials (say concrete, asphalt......) to a class and detect the entire area that is occupied by urban material and compare it with another city. for example, City A includes more construction which is focused basically at the city center, however, City b has just 10 percent construction at the surrounding area.

I think a new interesting field for GIS and construction is building information modelling. But from remote sensing side can be to study methods for automatic classification and data extraction using high resolution satelite images. In general remote sensing in those cases you mention is also in land management and multitemporal studies about how construction develop through time.
The 'hot' topic in CM is data fusion of remote sensing at the other end of the spatial and temporal scale from satellites and their derived products. At the AEC ( 'Architecture, Engineering, and Construction ) Hackathon 6.2 last year my team did a small demonstration of this: https://www.youtube.com/watch?v=7IgL81YgRAw ( and you can get a sense of where the interest is and innovation is occurring by surfing some of the other projects done over the past few years. ).
It seems backward, but the availability of data and selection of region of interest will constrain the research question to a large degree. In the US Pacific NW we have a very high resolution data rich situation, and also in the EU which has awesome time series datasets including emissions like the CORINE land cover, the European Commission Human Settlement data, and the ESA/DLR URBAN-TEP and it's national sub-projects. Some of these are global in extent.

Classification is a well worn path over the past four decades, anything based on Landsat is almost obsolete because of the new generation of platforms ( MethaneSAT https://bit.ly/31Zfb3w ) and sensors, and globally harmonized data products like URBAN-TEP at the meter level are already in beta, so any effort spent on a bespoke Remote Sensing methodology like classification is redundant at this point, IMHO.
So, research which leverages these existing or near-term products ( rather than imagery scenes like Landsat ) and fuses them with emerging technology like drone imagery and lidar to inform one (or some) of the construction management phases within the spatial and temporal scale, extents and resolution of an urban development ( like Toronto's Quayside ) would be forward looking, have a baseline for further research, and a basis for any future funding opportunities.
