If you're lucky, this kind of data is available on the CAN bus (or another bus system used) - usually at a reduced data rate. But only if you're lucky. And this will be no raw but preprocessed data.
I'd expect the MAF sensor to be connected to the ECU via a SENT connection - a point-to-point "private" communications link. The same might apply for a MAP and the throttle valve's position sensor. Message rates are expected to be 1-2 messages per millisecond - making for a lot of data. To access this data, you will have to tap each link individually.
