Do you have a suggestion on which analysis to run, to recognize if patterns of Likert Scale answers differ based on demographics?
For example, do the answers supplied on a Likert Scale differ between the age of respondent.

If patterns are your focus, a simple method might be to use a contingency table comparing responses to a Likert item as one dimension to age groups as the other. This would allow you to determine if there were a significantly different pattern across age groups and follow ups could explore the nature of that pattern.
A lot depends on whether you have single, Likert-scored item, or whether you have aa series of related items that can be combined into a scale, which can be treated as linear. If you can create a scale, then you could correlate it with age coded in years.
